6 to 8 ripe yellow peaches, peeled and sliced
1 tablespoon lemon juice
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1 tablespoon cornstarch
1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter, melted
Preheat oven to 350ยฐF. Toss peaches with lemon juice, sugar, vanilla, and cornstarch. Spread in baking dish.
In another bowl, combine flour, oats, brown sugar, cinnamon, and salt. Stir in butter until crumbly.
Sprinkle topping over peaches. Bake 40โ45 minutes until golden and bubbly.
Let cool slightly. Serve plain or with vanilla ice cream.
