A fairly simple dessert featuring the tree tomato of New Zealand.
Prepare flavored gelatin according to package directions. Cool and pour a small amount into each glass. Place in refrigerator to set.
Add cooked, sliced tamarillos (without liquid) to top gelatin.
Cover with about 4 Tbsp. of pudding and more tamarillos.
Refrigerate until ready to serve. Top with ice cream and crushed Clean Snax.
- Tamarillos can be golden orange or deep red in color, and are ripe when they have a slight give to pressure.
- Wear a pair of disposable gloves when working with red tamarillos as they tend to stain.
- Both gold or red tamarillos can be tart even when ripe, so you may wish to add a bit of honey to sweeten them.
- To cook tamarillos, peel with a vegetable peeler, slice into four wedges and add to boiling water until soft.
