2/3 cup Cream Cheese, softened
3/4 cup Sour Cream
1/3 cup Powdered Sugar
1 box Jello Instant Pudding Pistachio Flavored (3.4 ounce box)
6 Crepes
Dessert Sauce Raspberry Flavored to taste
Using an electric mixer fitted with a whisk, combine the softened cream cheese, sour cream, and powdered sugar. Mix until creamy and smooth.
Sprinkle in the pudding and blend until well incorporated.
Spread evenly onto a crepe and roll it up.
Drizzle with the raspberry sauce. Dust with powdered sugar, if desired.
I serve this as a dessert after a traditional Corned Beef and Cabbage Dinner!
