Bright and refreshing, this Lemon Posset is a silky, citrusy dessert made with fresh lemon juice and cream, then topped with sweet, juicy Harry’s Berries. Simple yet elegant, it’s the perfect way to showcase premium, farm-fresh berries in a light and irresistible treat.
3 ¾ cups heavy cream
1 cup + 2 tablespoons sugar
¾ cups fresh lemon juice
Zest of two lemons
Pinch of salt
Garnish
1 pint Harry’s Berries, halved, sliced or diced
Gourmet Strawberry Dessert Sauce (optional)
Heat cream and sugar. Bring to a gentle boil over medium heat, stirring to dissolve the sugar.
Boil briefly, reduce heat and simmer 2-3 minutes, stirring occasionally.
Remove from heat and stir in lemon juice, zest, and salt.
Strain through a fine sieve to remove zest and ensure a smooth texture.
Pour equally into 6-8 small cups, ramekins, wine glass or halved and hollowed lemons.
Chill overnight to set.
Top with 1-2 teaspoons of Gourmet Strawberry Dessert Sauce (optional) and Harry’s Berries, halved, sliced or diced.
