This Hatch Pepper Mango Cobbler combines juicy sweet mangoes and roasted Hatch peppers beneath a golden, buttery cobbler topping for a delicious Southwestern-inspired dessert. For the filling
4 cups mango, thickly sliced
2 Hatch Peppers, roasted, peeled & finely diced
¾ cups granulated sugar
¼ cup brown sugar
1 tablespoon lime juice
1 teaspoon vanilla extract
1 tablespoon cornstarch
¼ teaspoon salt
For the cobbler batter
1 cup butter, unsalted
1 cup all purpose flour
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
¾ cup whole milk
½ teaspoon vanilla extract
Preheat oven to 350 degrees F
Place butter in a 9x13 baking dish and melt in oven.
Toss mangos with sugars, lime juice, vanilla, cinnamon, salt, and cornstarch. Fold in roasted Hatch Peppers.
Whisk flour, sugar, baking powder and salt.
Stir in milk and vanilla and mix until smooth but do not overmix
Pour batter evenly over melted butter.
Spoon mango mixture over the batter. DO NOT STIR.
Bake for 45-60 minutes, or until golden brown on top.
