Thinly slice 1-inch pieces of fresh ginger and turmeric root.
In a medium-sized saucepan combine ginger and turmeric with 6 cups of water and bring to a boil. Turn heat to low and simmer for 10 minutes.
Remove from heat, add fresh mint and steep for 10 minutes. Strain liquid into 2 mugs and sweeten with Melissa’s Honeycomb or maple syrup, to taste.
