1/2 pound Baby Zucchini, washed and halved lengthwise
Ground Black Pepper to taste
6 slices Bacon, cut into thirds
1 cup Sharp Cheddar Cheese, shredded
Chives, chopped small as needed
Preheat broiler and position the rack 6 or 7 inches from the heat.
Place the zucchini on a cookie sheet cut side up and season with the pepper.
Place a piece of bacon on each zucchini and generously top with the cheese.
Place in the oven and broil for about 5 to 10 minutes or until bacon is crisp and cheese is golden brown.
Garnish with the chives.
I like to serve this dish with a Chipotle Aioli Dip.
