This hot new veggie has been turning heads in Europe, and now it's having its moment in the sun stateside. Neither zucchini nor cucumber, Zucchiolo® is a naturally developed vegetable variety entirely its own.
Zucchiolo® is shaped like a small kabocha squash and comes in three distinct colorings: deep green, light green, and a striking yellow with bold green veining. Zucchiolo® skin is thin, glossy, taut, and entirely edible. Underneath, the pale, dense flesh is notably crunchier than a common zucchini, with a crisp, succulent texture that immediately recalls a cucumber. Tiny ivory seeds are edible and nearly undetectable when eaten.
Zucchiolo® delivers a mild, subtly sweet, and green-forward flavor that absorbs and amplifies whatever it's cooked alongside. Zucchiolo® is crisp and refreshing raw, and when cooked it softens into something tender and savory-sweet.
Enjoy Zucchiolo® sliced fresh into salads or on grazing boards, or cook with it; it sautés, grills, and roasts beautifully. Zucchiolo® is ideal for grain bowls, stir-fries, or simply with a drizzle of good olive oil and flaky salt. Skin-on preparation is encouraged, and no peeling or seeding is required.
Storage: Store whole Zucchiolo® in the refrigerator crisper for 1–2 weeks. Once cut, keep in an airtight container and use within 3–5 days.
