Tardivo is related to radicchio and has the same distinctive burgundy-red leaves as its cousin, the more familiar globed radicchio rosso.
However, the variety’s pronounced white ribs are tinged with a white to light green coloring with elongated leave.
The production of this variety is very labor intensive that involves stages both in the field and then finishes in complete darkness for several weeks.
Tardivo is also much milder in taste than common radicchio, with a slightly bitter, nutty flavor that can be best appreciated when grilled, roasted or slow cooked.
The Italian red lettuce can also be shredded raw in salads or slaw for a peppery bite as well as a splash of unique color.
