Romano beans, also sold as Italian Beans, are flat, wide and flavorful. The variety ranges in size from 5 to 7 inches. While smaller beans are very tender, larger ones will have a more developed bean inside and are more flavorful with a sweet, nutty taste.
Romano beans make a great substitute for green beans in any recipe. They are excellent braised or in casseroles, stews and soups.
Look for fresh, clean beans that are tender, crisp and well-shaped. Beans will keep for several days in a plastic container, but are best when used immediately.
