The purple variety of this popular vegetable does not lose its vibrant color when cooked and is prized for having a slightly more pronounced nutty flavor than its green globe cousin. The dark purple adds an unexpected splash of color when served. Artichokes can be a meal in itself, prepared simply--just steamed, the leaves plucked then dipped into garlic-butter.
Artichokes are an edible member of the thistle family and actually the immature bud of what would be a large sunflower-like blossom if not picked for consumption. The meaty base of the globe is called the heart and is considered a culinary delicacy.
Slice chilled hearts in salads or batter-fry in oil for a delicious appetizer.
Choose globes that appear fresh with firm leaves that have no shrivel. Refrigerate at all times. Artichokes can be stored for up to 10 days in a plastic bag in home crisper.
