Palmer Mangos are a late-season mango variety with deep reddish-purple skin, creamy orange flesh, and a silky, low-fiber texture. Beneath the burgundy-toned skin of Palmer Mangos, often blushed with red and purple, the sweet, tropical flesh is smooth from skin to pit. Unlike fibrous, stringy mangos, Palmer Mangos are generously sized, which makes each piece of fruit feel like a centerpiece.
Palmer Mangos arrive from Brazil in the fall, just in time for holiday feasting and long after most mango varieties have finished for the year. Because Palmer Mangos are red-purple from the start, skin color is not a reliable sign of ripeness. Instead, check ripeness by feel: a ripe Palmer Mango yields to light pressure, much like a ripe peach or avocado.
Palmer Mangos have a rich, honeyed sweetness and a smooth, buttery texture that sets them apart from stringier mango varieties. Palmer Mangos are cholesterol-free, fat-free, low in calories, and an excellent source of Vitamin C.
Enjoy Palmer Mangos at every stage of ripeness. Perfectly ripe Palmer Mangos are best enjoyed out of hand, whereas slightly firm Palmer Mangos are excellent sliced into salads, diced into salsas, or added to grazing boards. Extra-soft Palmer Mangos are ideal for baking, blending into smoothies and lassis, or puréeing into sauces. Palmer Mangos pair well with fish and poultry and are a delicious addition stirred into curries.
Storage: Ripen Palmer Mangos at room temperature, out of direct sunlight. Once ripe, Palmer Mangos should be refrigerated and enjoyed within 5 days for optimum quality.
