California-grown Organic Ume Plums are available for a very short season during the spring. Originating in China, Ume Plums are never eaten raw. They are customarily used in Asian cuisines for pickling, distilling, fermenting and preserving. In Japan, Ume Plums are used to make Umeboshi, a traditional pickled dish typically served sour, or sweetened with honey. They can also be stewed or cooked into syrups to create a sweet and salty flavoring element.

Store Ume Plums whole and unwashed in the refrigerator for up to 5 days. For best flavor, preserve the fruit immediately. Pickled or fermented plums will keep for several years when stored away from direct sunlight.
