Eye-popping magenta flesh and bright green spiked skin, the dragon fruit visually pops with color. While the hues bring liveliness, the shape of the fruit brings playfulness. The flesh dragon fruit is similar to the texture of a kiwi or melon but a bit grainier. The inside is a purplish-pink color with tiny black specks that are minuscule seeds. The flavor of dragon fruit is a cross between kiwi, pear and pineapple, and are usually more flavorful when served cold.
To prepare, cut the fruit in half, then use a spoon to separate the interior flesh from the skin to eat. Note, the skin is not edible. Eat raw out-of-hand, in salads, or add to desserts like ice cream, sorbet or quick bread. Adding dragon fruit to any dish will make it pop with color and add an excellent visual effect.
Look for fruit with hot pink skin that is free of soft spots or mold. Ripe fruit will give slightly to gentle pressure. To ripen fruit, leave at room temperature for one to two days. Refrigerate ripe fruit in a crisper drawer up to three or four days.
