Hatch chiles are grown in New Mexico's Hatch Valley, just north of Las Cruces along the Rio Grande's southernmost bend before it crosses into Texas and Mexico. Through the summer, the valley fills with row after row of green leafy pepper plants, which are harvested, roasted, and packaged at peak flavor.
