This rare delicacy, usually limited to the kitchens of five-star restaurants, is available during a very short harvest window in the spring. Within the still immature and fuzzy shell of an almond is a skinless, white, underdeveloped nut with a gelatinous texture, similar to a firm grape. The distinctive, yet subtle, flavor has a grassy tang to it.
A traditional snack in the Middle East, eaten fresh out of the shell sprinkled with a little salt; use them diced to top ice cream or shave whole green almonds into salad for a pleasingly astringent accent.
Refrigerate green almonds at 35 to 45 degrees.
