This is a Black Winter truffle variety grown exclusively in the southwestern region of France called Perigord. Not only is this variety specific to Perigord, the wild truffles are usually only found nestled in the roots of a certain type of oak tree native to the region. The Périgord black truffle is considered the champagne of truffles by discerning culinary professionals for its earthy aroma and rich chocolate flavor. For the gourmet without price limitations, it doesn’t get any better than a white truffle from the French countryside.
Truffles can be stored for several days in a paper bag in the refrigerator. A plastic bag is not advised as it will attract moisture and shorten shelf-life.
