Fingerlings are firm and have smooth skins with similarly colored flesh, approximately 1-3 inches long and 1 inch wide. Fingerling Potatoes should be kept in refrigeration at temperatures from 45-55 degrees F. When stored in cooler temperatures, the sugar content of these potatoes has a tendency to change to starch.
Prepare as you would any baby or specialty potato. They are thin skinned and should be cooked whole and unpeeled. Russian Bananas are great in salads and are excellent baked, roasted, and steamed as well.
