The dried version of this pepper is much darker than the fresh chile.

This pepper has become synonymous with Peruvian cuisine, especially favored as a condiment in potato dishes, the country’s primary crop.

Aji Amarillo peppers are also great to spice up salsa, stews, soup, sauces and chicken dishes.
