With a uniquely colored, edible pod of distinctive purple streaks and flecks over a pale yellow background, the Dragon Tongue Bean is considered a “Romano” variety -- flat, wide and flavorful. 

Use raw for an unusual splash of color in salads, as a garnish or pickled with spices. When cooked, the beans’ color fades, while its flavor intensifies; use in stir fry and casseroles.

Whether picked very small and immature or left to grow to its full 8-inch length the Dragon Tongue retains its tender texture, unlike other fresh bean varieties that turn tough.
