Also known as the Ghost Pepper, Bhut Jolokia peppers are grown in the USA, Holland, India and the Netherlands. Originally from rural India, this pepper's size, texture, and heat level differ depending on the region where it is grown. You'll find this capsicum in your local grocery store, distinguished by its glossy, saturated red color and acrid penetrative smell.
The aroma separates the novice from the pepper head looking for their next greatest fiery quest. Although this pepper is known for its heat, clocking in at over 1 million units on the Scoville Scale, it does present layers of flavor that are expressed in different ways when pounded, sliced or fermented. Natives of India describe the taste like fire, like the sun. Stir into stews, chop up into condiments, or sprinkle over meats to experience a taste of northeastern India. Be warned. A little goes a long way with this pepper – you only need a blot in your recipes to add flavor and flair.
Look for glossy pepper with bulges, featuring a bright red hue and medium to thick flesh. Bulges translate to mean more flavor, both in sweetness and in spice. To store, refrigerate unwashed and away from moisture for up to five days. Note that this pepper should only be handled with the protection of rubber gloves.
Bhut Jolokia pair well with onions, garlic and fresh herbs. Just remember in your culinary applications that this pepper doesn't pander to those who aim to tone it down.
