While most turnips really need to be cooked, this variety is delicious raw. Also marketed as the hakurei or Japanese turnip, these golf ball sized tubers have a sweet, mild flavor with a thin skin that does not need peeling—just a good scrubbing. Sliced baby turnips make a crunchy sweet addition to any green salad; they are also wonderful simply sautéed in butter and white wine. Not your ordinary turnip!
