With origins in the Middle East, the Baby Purple carrot is prized by culinary professionals for its vibrant, deep purple color and complex, slightly sweet-tart flavor. While the variety does make for a dramatic presentation in any plating, it must be handled with care as the color will stain hands, clothing, and kitchen counters. Use cooked or raw in soups, salads or as a strikingly delicious garnish.

Selection & Storage
Choose carrots that are bright and firm; avoid carrots that are dull and rubbery. Carrots keep for up to a month in a dry crisper. Never store ethylene-producing fruit with carrots; the gas turns carrot bitter and inedible.
