Sometimes known as a bottle gourd or lauki, Bengali squash is a pear-shaped Indian variety with a similar flavor to zucchini and a slightly spongy texture. It is often used to make curries, sambar, dal, stew, soups, halwa and chutney.

Bengali squash can be prepared with the peel on or off. Generally, the peel, seeds and spongy interior are removed before cooking.

Look for firm gourds with smooth, unblemished skin and a fresh green stem. Store unwashed Bengali Squash in a cool, dry place for up to a week.
