Melissa's Purple Napa Cabbage is a tender, short-season specialty that truly stuns on the plate. Elongated and loosely bundled, its leaves unfurl in layers of iridescent fuchsia-purple that deepen to rich reddish-purple toward the outer edges. The outermost stems are white at the base, gradually striating upward into vivid color, while the small inner leaves at the heart of the head are threaded with whispers of green. Each leaf is crinkled and ruffled at the edges, with a pliable texture that sets it apart from denser green cabbages.
Purple Napa Cabbage tastes sweet and mildly peppery. It is more tender and delicate than green Napa, but can be used in all the same ways. Raw, it tastes clean and refreshing, crisp on the first bite, then yielding and juicy, with a lingering sweetness. Because it is more tender than green Napa, it softens quickly under heat without turning bitter or heavy.
Purple Napa Cabbage is as versatile in the kitchen as it is beautiful. Enjoy it raw shredded into salads and slaws. It makes a vibrant kimchi and layers beautifully into lettuce wraps and rice paper rolls. Try stir-frying quickly with ginger, sesame, and soy for an easy weeknight side, or braise it with a splash of rice wine vinegar to keep the color bright. Purple Napa pairs especially well with citrus, chili, miso, toasted sesame oil, and fresh herbs.
Store whole Purple Napa unwashed in the refrigerator crisper. Wash only before use. Once cut, wrap the remaining head tightly in plastic wrap and refrigerate for up to 5 days.
