Crown dill, dill that is harvested after blossoming, is green with yellow flowers coming out from the top of the herb. Crown dill has a more pronounced flavor when compared to other varieties, making it perfect to use in pickling. The anise-parsley-celery taste of the feathery leaves goes well with fish, vegetables, soups and salads.
Choose fresh-looking crown dill with vibrant color and a clean, fresh scent. To keep fresh, refrigerate in a plastic bag filled with air and securely closed.
Store in the vegetable crisper section of the refrigerator. If leaves do become wilted, an ice water bath can revive them. Try and avoid selecting dill that shows any brown spots and wilted stems or leaves.
