The deep purple/burgundy-colored skin of Melissa’s Organic Murasaki Sweet Potatoes encases the variety’s signature bright white flesh, which turns pale golden when baked or roasted. Our Murasaki sweets are medium to large in size, ranging from 2-3 inches wide by 7-8 inches in length. Their thin skins can be mottled, and they are edible. The flesh of Murasaki sweets is a creamy white to faint yellow, and it is both drier and starchier than other sweet potato varieties. They have a wonderfully flaky texture, with a sweet, slightly nutty and robust flavor.
“Murasaki” means purple in Japanese, but this variety was–in fact–developed in Louisiana, and today it is primarily grown in California. Sweet potatoes are an excellent source of vitamins A and manganese, and they are also a good source of fiber.
Enjoy Murasaki sweets as you would other sweet potatoes; baking and roasting will enhance their natural sweetness, and gentle steaming or boiling will highlight their satisfying, starchy mouthfeel. Skins are edible, but potatoes should be scrubbed thoroughly before eating. Murasakis make delicious French fries and chips. They are equally excellent with butter or olive oil, and both savory or sweet toppings. Add them to curries, soups and stews. Or, try them roasted and finished with butter and brown sugar for a satisfying dessert.
Store out of direct sunlight in a well-ventilated area, preferably in a basket, for up to three weeks, or wrap loosely in a plastic bag and store in the refrigerator for up to 2 months.
