These medium-sized, bitter oranges are best known as the star ingredient in orange marmalade, but they’re also excellent for juicing, zesting, and as a swap for lemons and limes in citrus-forward desserts. They are named for the Spanish city, where streets are famously lined with more than 14,000 Seville orange trees. Seville oranges are intensely aromatic and tangy, with dimpled yellow-orange skin and a thicker pith than mandarins, making them an ideal citrus for candying.
A cross between a pomelo and a mandarin, the flesh of Seville oranges can range from yellow to deep orange. Segments are pleasingly juicy with creamy-colored seeds, which are naturally high in pectin and thicken preserves. Beyond marmalades, the juice of Seville oranges elevate cocktails, shine in ceviches, and pair beautifully with braised meats, especially duck.
Because of their pronounced sour flavor, Seville oranges are rarely eaten raw. Instead, enjoy them in desserts, juices, marinades, vinaigrettes, and sauces.
Choose Melissa's Seville Oranges with deep yellow rinds, avoiding blemishes and soft spots. Ripe Seville oranges are extremely fragrant, and they will last up to 10 days at room temperature. Refrigerate or freeze for longer storage.
