1 turkey carcass
4 celery stalks, chopped
4 carrots, chopped
1 onion, quartered
5 cloves garlic, peeled
1 tablespoon peppercorns
3 bay leaves
1 bunch parsley with stems
Combine all ingredients in a stockpot and cover with water. Bring to a boil over high-heat.
Reduce heat and simmer until broth is reduced by 1/3.
Strain and let cool, then refrigerate or freeze.
