Ingredients

1 medium Red Onion, diced

3 whole Organic Garlic cloves, minced

2 tablespoons Dried Oregano

Salt to taste

1/2 pounds Organic Tofu

2 whole Organic Carrots, diced

1/2 pound Green Beans, cut into 1-inch pieces

2 medium Organic Tomatoes, diced

1 cup Vegetable Stock

1/2 bunch Cilantro, chopped

2 tablespoons Chile Powder

2 whole Organic Limes, thinly sliced

Lime Juice of one Lime
Directions
In a large pot, heat the oil and sauté the onion and garlic.
Add the remaining ingredients and simmer until done, about 35 minutes.
