Ingredients

8 whole yellow chiles, seeded

1 stalk lemongrass, coarsely chopped

1/4 cup shallots, thinly sliced

2 tablespoons onion

1 teaspoon Kra-Chai, coarsely chopped

1 teaspoon coriander seeds

1 teaspoon curry powder

1 teaspoon dried mustard

1 teaspoon salt
-
1/2 teaspoon ground cinnamon

1 tablespoon sugar

2 tablespoons vegetable oil
Directions
Combine all the ingredients in a food processor and process until smooth. If a mortar and pestle is used, then add oil after all other ingredients are ground.
Refrigerate in a glass container.
Recipe Note
This paste keeps well for several months.
