2 whole Organic Valencia Oranges, washed and patted dry
1/2 cup sour cream or mayonnaise
To zest and juice orange, first soften by rolling on a firm surface, then use zester or fine grate of a box grater to remove thin ribbons of peel. Place into a small mixing bowl.
Slice in orange in half and juice with orange juice reamer or juicer. Pour juice into bowl with orange peel.
Combine 1/2 cup sour cream or mayonnaise, peel, and orange juice. Blend well and chill until ready to use. Spoon over your favorite green salad.
If you'd prefer, low fat or fat-free yogurt may also be used in the same quantity as sour cream or mayonnaise.
