3 ripe organic tomatoes, diced
1 large onion, finely diced
1 Jalapeno Chile, finely diced
1 ear corn, shucked and blanched, kernels removed
1/3 bunch cilantro, chopped
1 lemon juice, freshly squeezed
1 lime juice, freshly squeezed
Salt to taste
Cracked black peppercorn to taste
Mix all of the ingredients and let marinate for at least 30 minutes.
