Melissa's Corporate Chefs
1 pound Plumcots, diced
1/3 cup Red onion, minced
1/2 cup Cilantro, finely chopped
1/4 cup Mint, finely chopped
1 teaspoon Jalapeno Chile, red variety
Salt and White Pepper to taste
1 tablespoon Lime Juice
2 teaspoons Sugar
In small bowl, combine lime juice and sugar until sugar dissolves, making marinade.
In large bowl, add all other ingredients, adding salt and pepper to taste.
Stir marinade into mixture and serve chilled.
