2 tablespoons Olive Oil
1/2 medium Onion, chopped
6 cloves Organic Garlic, finely chopped
3/4 cup Roasted Peanuts
1 1/8 ounces Coconut Milk
1/4 cup Maple Syrup
1/4 cup Rice Vinegar
1/4 cup Aged Soy Sauce
1 teaspoon Red Chile Flakes
Sauté onion and garlic in oil until transparent.
Place the onion and garlic mixture in a blender or food processor, along with the remaining ingredients.
Blend thoroughly until smooth. Serve warm.
Serve with chicken satay, tofu, roasted potatoes,etc.
