2 cups water
2/3 cup sugar
2/3 cup loquats
1 teaspoon vanilla extract
Combine water, sugar and loquats in heavy medium saucepan.
Bring mixture to boil. Reduce heat to medium and simmer until loquats are tender, about 25 minutes.
Remove from heat. Cool 15 minutes.
Transfer loquat mixture to blender and puree, until sauce is smooth.
Add vanilla extract and blend well. Serve chilled or at room temperature.
