1 cup Orange juice, freshly squeezed
1/3 pound Kumquats, Fukushu Kumquats, or Mandarinquats, quartered
1/4 cup Rice Wine or Dry Sherry
3 teaspoon Soy Sauce
1 teaspoon Chile Garlic Sauce
1 tablespoon Sugar
1/4 cup Vegetable Oil
6 Dried Japones Chiles
Soak kumquats in hot water until softened, about 15 minutes, then drain.
Chop kumquats into small pieces leaving skin on.
Combine remaining marinade ingredients in a bowl.
Use on your favorite fish or poultry or your favorite stir fry.
