1 medium organic orange
1 (12 ounce) package cranberries
1/2 cup orange juice
1/3 cup white sugar
1/8 teaspoon cinnamon, freshly grated
Cut unpeeled orange into eighths.
Place 1/2 the package of cranberries and orange wedges in a blender or food processor and process until coarsely chopped. (If using a blender, pulse on low 6 times).
Scrape down sides and pulse again till evenly chopped. (You will have to repeat this process about 5 times.)
Transfer mixture into a bowl.
Pour the remainder of the cranberries into the processor, add orange juice, and squeeze juice from the remainder of the orange slices into processor and puree until smooth.
Transfer puree to a bowl and stir in sugar until dissolved.
Fold cranberry puree into the chopped cranberry/orange mixture.
Grate cinnamon over a microplane into cranberry/orange mixture and stir.
Cover with plastic wrap and refrigerate for several hours to mix flavors.
