Ingredients

1 cup Soybeans (Edamame)

1/2 cup Unflavored Soymilk

2 tablespoons Cilantro, without stems chopped

2 cloves Garlic, minced

1 teaspoon Chipotle Peppers, chopped (optional)

1 large Avocado, ripe

2 teaspoons Organic Limes juice, freshly squeezed

Salt and Fresh Ground Black Pepper to taste

1 tablespoon Cilantro, chopped for garnish
Directions
Cook edamame in salted boiling water for 5 minutes. Drain and cool to room temperature.
Combine edamame, soymilk, cilantro, garlic, and chipotle chiles in the bowl of a food processor. Process until mixture is very smooth, about 3 minutes. Set aside.
Peel and pit avocado and place in a medium mixing bowl. Add lime juice and mash with a fork, leaving small chunks.
Add edamame mixture and stir to combine. Season with salt and pepper.
Garnish with cilantro.

Edamame Fact: In addition to being a great snack, 1 cup of cooked edamame has 7 grams of fiber and a whopping 22 grams of protein.
