French Summer Feta Salad

This summer salad couldn't be easier to prepare—just slice 3 veggies and chop 2 herbs; then squeeze fresh citrus juices, drizzle a bit of oil, toss—then plate. Top with a creamy French feta and serve—that’s it! You can get this salad to the table in under 5 minutes: start-to-finish!

To create your clever “dressing”, simply squeeze the fresh lemon and lime juices on top of veggies and herbs, drizzle a bit of extra virgin olive oil, sprinkle a bit of kosher flake salt and a few grinds of fresh black pepper; toss and you’re done.

This summer salad is not only easy, it also showcases the best of summer flavors—vine-ripe tomatoes, sweet Persian cucumbers and mild red onions, and refreshing mint.

French Summer Feta Salad
Serves: 4

Ingredients:
2 cups Miniature Heirloom Tomatoes
½ cup Red Onion, chopped
3 Persian Cucumbers, cut into ¼ inch slices
½ cup Fresh Mint Leaves, rough chop
¼ cup Fresh Parsley, finely chopped
Juice of ½ Lemon
Juice of 1 Lime
½ teaspoon Olive Oil
Freshly Ground Black Pepper
Sprinkle of Kosher Flake Salt
½ cup French Feta Cheese, crumbled

Preparation:
  1. Slice tomatoes in half if small; quarter if large, so that you have roughly the same size pieces of tomato. Place sliced tomatoes in a bowl, then add cucumbers, onion, mint and parsley. Lightly toss.
  2. Pour citrus juices over salad, then drizzle olive oil over top and sprinkle salt and pepper over salad and gently toss again.
  3. Place salad on chilled plates and top with crumbled Feta cheese.
  4. Serve immediately.
