Melissa's Chefs
Melissa's Sun Dried Tomato Pesto adds a nice zing to this fresh wrap.
1 tablespoon Sun Dried Tomato Pesto
1 Whole Grain Tortilla or Wrap of choice
1/2 cup Black Beans cooked
1 cup Organic Carrots shredded and sauteed in garlic and shallots; cooled
1 cup Veggi Chicken Strips, sliced Tempeh, or vegetarian crumbles
1 leaf Organic Romaine Hearts
2 slices non-dairy cheese
Melissa's Hatch Salsa (Hot)
Lay tortilla flat on work surface. Place romaine lettuce down on tortilla first to create a moisture barrier.
Add the rest of the ingredients on the lettuce and roll it like a burrito only about 1 inch thick.
Then slice on the bias with a serrated knife. Serve with Melissa's Salsa.
