• 6 tablespoons peanut oil or canola oil

• 3 organic green onions, cut crosswise into very fine rings (all the white and the lower half of the green)

• 5 ginger roots, peeled, sliced thin and finely chopped

• 3 cloves organic garlic, peeled and finely chopped

• 1 medium organic carrot, peeled and coarsely grated

• 2 Jalapeno chiles, finely chopped

• 4 tablespoons cilantro, chopped

• 4 mint leaves, finely chopped

• 2 teaspoon Garam Masala

• 1/2 teaspoon cayenne (or to taste)

• 1 teaspoon salt

• Fresh ground black pepper

• 1 egg, beaten

• 1/4 cup bread crumbs (dry) or as needed
