Ingredients

1 pouch Melissa’s Steamed Six-Bean Medley
-
½ cup Melissa’s Hatch Salsa
-
1 tbsp chili seasoning mix

1 package Melissa’s Cooked Polenta, original or Hatch, sliced into rounds
-
½ cup shredded cheddar cheese
-
Melissa’s Pickled Jalapeños, for garnish

Melissa’s Himalayan Pink Salt and Rainbow Peppercorn spice grinders, to taste
Directions
In a pot over medium heat, combine Melissa’s Steamed Six-Bean Medley, Hatch Salsa, and chili seasoning mix. Stir well and let simmer for 5-7 minutes, until flavors meld and mixture thickens slightly.
In a separate pan, lightly sear Melissa’s Cooked Polenta rounds over medium heat until warmed through and slightly crispy on the edges.
Serve the chili over the polenta rounds and top with shredded cheddar cheese.
Garnish with sliced Melissa’s Pickled Jalapeños for a spicy kick.
