Warm flour tortillas on grill or skillet.
Sprinkle each tortilla with 1 ounce grated Jack cheese.
Separately, scramble eggs with jalapeños in skillet until set.
Spread scrambled eggs over tortilla and close.
Cut into four triangles.
Garnish with cilantro.
Serve with guacamole and salsa (optional).
