This Avocado Toast Seasoning Crusted Grilled Tomato and Cheese Sandwich is a flavorful twist on a classic grilled cheese. Sourdough bread is layered with creamy seasoned avocado, melted cheddar cheese, and juicy heirloom tomato, then grilled in Avocado Toast Seasoning-infused butter until golden and crisp. An easy, satisfying American-style sandwich perfect for lunch or a quick dinner.
Ingredients

4 slices Sourdough Bread

4 Tbsp. Unsalted Butter – melted

3 Tbsp. Melissa’s Avocado Toast Seasoning – divided use

2 ripe Avocados
-
½ Lime
-
4 slices Cheddar Cheese
-
1 Melissa’s Heirloom Tomato – sliced
Directions
Mix 1 Tbsp. of Avocado Toast Seasoning into the butter. Set aside.
Cut the avocado in half and remove the seed. Scoop out the avocado flesh and place it into a bowl. Mash the avocado, squeeze the lime juice into the avocado, and mix in the rest of the Avocado Toast Seasoning.
Brush a sourdough slice with the butter and place it on a griddle, butter side down. Smear a layer of the avocado onto the bread, top that with a cheese slice, tomato slice, and another cheese slice. Top with another slice of bread and brush it with butter.
Heat the griddle to medium/hot and cook until the bread is golden brown and the cheese begins to melt. Carefully flip it over and repeat. When that side is golden brown and the cheese is melted, remove it from the griddle, slice in half, and serve.
