Basil is a green leafy herb with warm, spicy overtones and has a strong fragrance that can be easily identified by most. With hints of licorice and cloves, basil pairs well with chicken, lamb or duck. Because of its fragrant and robustly flavored qualities, basil makes a wonderful addition to many savory dishes.
Choose fresh-looking basil with vibrant color and has a clean, fresh scent. Avoid any brown spots and wilted stalks or leaves.
To keep fresh, refrigerate in a plastic bag filled with air and securely closed. Store in the vegetable crisper section of the refrigerator. If leaves do become wilted, an ice water bath can revive them.
Leaves should be thoroughly washed and dried before using.
