Looking more like a petite parsnip, this baby carrot variety has a slightly spicy bite to it and an especially crunchy texture. However, both the flavor and crispiness is lost during the cooking process. Melissa’s highly recommends that the Baby White be served raw in salads, with dip on an appetizer platter or as an interesting fresh garnish with just about any kind of meat or fowl.
Selection & Storage
Choose carrots that are bright and firm; avoid carrots that are dull and rubbery. Carrots keep for up to a month in a dry crisper. Never store ethylene-producing fruit with carrots; the gas turns carrot bitter and inedible.
