“Murasaki” means purple in Japanese, which refers to this variety’s purple-red skin. Beneath the skin is white flesh that turns golden when cooked.

Compared to orange-fleshed sweet potatoes, the Murasaki has a more earthy, nutty-sweet flavor and a much drier, starchier texture akin to a cooked Russet potato—it’s the perfect choice for sweet potato fries and tempura!

Note that this selection is baby-sized, making it an excellent, single-serving option that cooks quickly.

Store in a cool, dry place for three weeks, or wrap loosely in a plastic bag and store in the refrigerator for up to 2 months.
