Toasting
Toasting is a technique used to release the flavor of ingredients such as sesame seeds or Sichuan peppercorns.
To toast, place the ingredients in a small, dry pan, preferably one with a heavy bottom, and place the pan over low heat, shaking frequently until the ingredients slightly darken and release their fragrance.
Small amounts of nuts may also be toasted this way. For larger amounts, place in a single layer on a pie pan and bake in a 350 degree oven until golden brown.
