A fun, refreshing 'adult' popsicle!
1 shot Tequila blanco
1 Tbs Cointreau
1 cup Kiwano pulp
2 Tbs lime juice
2 Tbs sugar
1/2 cup water
Flaky salt
Prepare syrup. Combine the sugar and water in a medium-size saucepan. Bring to a boil, stirring until the sugar has dissolved. Chill the syrup slightly.
Mix syrup with remaining ingredients. Pour the mixture into popsicle molds. Freeze until solid (for 6+ hours or overnight).
Sprinkle with flaky sea salt if preferred.
Alcohol has a lower freezing point than syrup and other popsicle ingredients, which is much lower than our home freezers can manage. To cater for this, these popsicles have 20% or less total alcohol. This works out to about 1 shot of alcohol in every cup of liquid.
